Salmon is a great source of vitamin D, E, B12, selenium and many B vitamins. This is my favorite salmon recipe, “Citrusy Salmon with Ginger and Cilantro”, from Dr. Aviva Romm’s, The Replenish Cookbook.
Ingredients:
1-pound wild caught salmon
2 limes
2 tbsp. olive oil
1 tsp. good quality salt
½ tsp. fresh grated ginger
¼ cup chopped cilantro
2 tsp. honey or maple syrup (I've used maple syrup)
Directions:
1. Preheat oven to 400 degrees.
2. Place your salmon on a baking tray lined with parchment paper.
3. Mix together the juice of the limes, olive oil, salt, and
grated ginger, and if you’re using it, honey or maple syrup
4. Pour over the top of your salmon.
5. Bake for 25-30 minutes (I actually bake it in less time)
6. Remove from oven and top with chopped cilantro and an extra
squeeze of lime juice. Enjoy!
