Mediterranean Chickpea Salad with a Lemon Dijon Dressing

This simple and quick Mediterranean Chickpea Salad with a Lemon Dijon Dressing is high in fiber and tastes great too. Serve it on top of salad greens, as a side dish, or as a light lunch with pita bread, pita chips, or crackers.


Ingredients for Lemon Dijon Dressing:

  • 2.5 tablespoons olive oil (can use Garlic Oil)

  • 2 tablespoons fresh lemon juice

  • 1/2 teaspoon Dijon Mustard

  • 1/4 teaspoon honey

  • Salt and pepper to taste

  • Pinch of dried oregano


Ingredients for Salad:

  • 1 1/2 cups cooked chickpeas

  • 1 avocado, seeded and diced

  • 1 cup cucumber, peeled and diced

  • 1 cup cherry or grape tomatoes, cut in halves

  • 1/4 cup red onion, diced

  • 2 tablespoons or more of fresh herbs of your choice, such as cilantro, basil, oregano, mint or thyme

  • 2 tablespoons crumbled feta cheese


Directions for Lemon Dijon Dressing

In a small measuring cup, add the ingredients and whisk together until fully emulsified. Set it aside.

Directions for Salad

Add all ingredients to a bowl and mix in.  Pour Lemon Dijon Dressing over the salad and gently blend everything together. Use immediately or refrigerate in an airtight container until you’re ready to serve.
