Steaming bowl of squash and lentil soup with herbs and bread on a rustic wooden table in a cozy kitchen.

As the air turns crisp and the leaves change color, I find myself craving warming, nourishing soups. This Golden Autumn Squash and Lentil Soup is one of those recipes that comforts and nourishes at the same time. It comes from one of my Ayurvedic teachers, Jeremy Ann Anderson, and it’s perfect for grounding and warming your body during the cooler months.

This soup is simple to make, packed with wholesome ingredients, and gentle on digestion. It’s a great way to support your body naturally, especially if you want to improve your energy and mobility as the seasons shift. It's also gluten-free, dairy-free, and soy-free.

Golden Autumn Squash and Lentil Soup Recipe

Ingredients:

  • 1 small butternut squash, peeled and cubed

  • 1 cup red lentils, rinsed

  • 1 carrot, peeled and chopped

  • 1 small onion, chopped

  • 1–2 cloves garlic, minced, or omit if using Garlic Oil

  • 1 tablespoon ghee or olive oil (or use Garlic Oil if you prefer to skip fresh garlic)

  • 1 teaspoon cumin seeds

  • 1 teaspoon ground coriander

  • 1/2 teaspoon turmeric powder

  • 4–5 cups vegetable broth or water

  • Mineral salt and freshly ground pepper to taste

  • Fresh ginger, grated

  • Fresh cilantro or parsley to garnish

  • A squeeze of fresh lemon

Each ingredient plays a role in making this soup both tasty and supportive for your body. For example, turmeric and ginger are known for their anti-inflammatory properties, which can help ease joint stiffness and support digestion.

Directions:

  • Warm the ghee or oil in a large pot over medium heat. Add the cumin seeds and toast them gently until they release their aroma. This step brings out the spice’s full flavor.

  • Add the chopped onion, carrot, grated ginger, and minced garlic (if using). Sauté until the mixture is fragrant and the vegetables start to soften, about 5 minutes.

  • Stir in the cubed butternut squash, rinsed red lentils, turmeric, and ground coriander. Mix everything well so the spices coat the vegetables and lentils.

  • Pour in the vegetable broth or water, then add salt and pepper to taste. Bring the soup to a boil.

  • Once boiling, reduce the heat to low and let it simmer gently. Cook until the squash and lentils are tender, about 25 to 30 minutes.

  • Use an immersion blender to blend the soup partially or completely, depending on your texture preference. I like it a little chunky for a heartier feel.

  • Finish by stirring in fresh herbs like cilantro or parsley and a squeeze of lemon juice. I like to add a fresh squeeze of lemon to each bowl of soup. This makes about 6 servings.

This soup is easy to make and it’s a wonderful way to enjoy seasonal produce while supporting your body’s natural rhythms.

Why This Soup Supports Your Well-Being

This recipe is more than just a meal. It’s a gentle way to care for your body, especially if you want to maintain mobility and energy as you age.

  • Butternut squash is rich in vitamins A and C, which support immune health and skin vitality. It's a nutritive tonic that is also grounding to the nervous system.

  • Red lentils provide plant-based protein and fiber, helping digestion and keeping you full longer.

  • Turmeric and ginger bring anti-inflammatory benefits that can ease joint discomfort and support overall wellness.

  • Cumin and coriander aid digestion and add warmth to the soup, making it grounding and satisfying.

Using ghee or olive oil adds healthy fats that help your body absorb the nutrients better. If you prefer, Garlic Oil is a gentle alternative that still offers flavor and digestive support.

Tips for Making This Soup Your Own

Feel free to adjust the recipe to suit your taste and needs:

  • Swap butternut squash for other fall squashes like kabocha or acorn squash.

  • Use homemade vegetable broth for extra flavor and nutrients.

  • Add a pinch of cinnamon or nutmeg for a cozy twist.

  • Garnish with toasted pumpkin seeds or a dollop of plain yogurt for added texture.

This soup freezes well, so you can make a big batch and enjoy it on busy days. Just thaw and reheat gently on the stove.
