Zucchini and Yellow Squash with Fresh Herbs Recipe


Ingredients

  • 1/2 cup white wine or vegetable broth

  • 1/2 cup minced red onion

  • 1-2 cloves of garlic

  • 2 cups diced tomatoes

  • 2 cups sliced zucchini and summer squash

  • 1/2 cup minced yellow or orange bell pepper

  • 1/2 teaspoon minced fresh or dried oregano

  • 1 tablespoon minced fresh basil

  • Optional: Freshly grated parmesan cheese or crumbled feta cheese


Directions

  • In a large skillet over medium-high heat, heat the wine or broth to simmering; add onion and sauté 3 mins, stirring frequently.

  • Add garlic, tomatoes, zucchini/summer squash, and bell pepper.

  • Cover and cook until zucchini is soft, about 5 minutes.

  • Add oregano and basil; cook uncovered for 3 minutes.


Serve warm or cold.
