Whether you're growing vegetables this summer or frequenting Farmer's Markets to stalk up on fresh veggies, try this simple recipe to use up those zucchinis and summer squashes that are abundant right now.
Ingredients:
1/2 cup white wine or vegetable broth
1/2 cup minced red onion
1-2 cloves of garlic
2 cups diced tomatoes
2 cups sliced zucchini and summer squash
1/2 cup minced yellow or orange bell pepper
1/2 tsp. minced fresh oregano
1 tbls. minced fresh basil
Optional: Freshly grated parmesan cheese or crumbled feta cheese
Directions:
In a large skillet over medium-high heat, heat the wine or broth to simmering; add onion and sauté 3 mins, stirring frequently. Add garlic, tomatoes, zucchini/summer squash, and bell pepper. Cover and cook until zucchini is soft, about 5 mins. Add oregano and basil; cook uncovered, 3 mins. Serve warm or cold.
