If feeling under the weather or having digestive issues, try this recipe with basmati rice, cilantro, lime, scallions, and garlic oil. All the ingredients aid digestion and have other benefits as well. Basmati rice is nourishing, satisfies your stomach, and is easy-to-digest. It also builds “ojas” - an Ayurvedic term that pertains to a person’s heartiness and vitality. Cilantro is a strong blood cleanser, a cholagogue, and calms the immune system. Lime is an internal detoxicant. Scallions are a strong vasodilator, blood thinner, diuretic, decongestant, and clear the sinuses. However, you don’t need to be sick to try this recipe; it’s tasty too.
Ingredients
1 tbsp. Garlic Oil
1 cup Basmati Rice
1 ½ cups water
2-3 scallions, sliced
Juice of ½ lime
¼ cup fresh cilantro
Pinch of mineral salt and black pepper
Directions
Heat the garlic oil in a saucepan; add the rice and sauté until the rice is toasted, about 4 minutes.
Add the water and mineral salt.
Bring to a boil; reduce heat to low, and cover.
Simmer for 15-20 minutes until water is mostly absorbed.
Keep the pan covered and remove from heat; let sit for 10-15 minutes to steam.
Stir in the cilantro, lime juice, scallions and black pepper.
