My garden is bursting with tomatoes, so I've been on the lookout for new recipes. I found this recipe recently, but I thought it called for too much olive oil - 5 tbls. Half that amount is fine, 2 1/2 tbls., up to 3 tbls. Don't get me wrong, olive oil is a healthy fat; but I don't think we need that much. So here's my revised recipe.
Ingredients:
1 lb. grape tomatoes, halved
2-3 cloves of garlic, or more if you'd like
2 1/2 - 3 tbls. olive oil
1 15-ounce can Cannellini beans (or other white beans); drained
1/4 cup sliced fresh basil (more to garnish)
Salt and pepper to taste
Directions:
Preheat oven to 400 degrees.
Pour olive oil into a 13x9 inch baking pan.
Place halved grape tomatoes and garlic cloves in the baking pan.
Cook for 20 minutes.
Remove from oven and mash tomatoes and garlic.
Blend white beans and basil into the tomato/garlic mixture. Sprinkle with salt and pepper.
Cook for another 5 minutes. Remove from heat and sprinkle with a few more basil leaves. Serve warm to hot.
