Roasted Tomatoes and Garlic with White Beans



My garden is bursting with tomatoes, so I've been on the lookout for new recipes. I found this recipe recently, but I thought it called for too much olive oil - 5 tbls. Half that amount is fine, 2 1/2 tbls., up to 3 tbls. Don't get me wrong, olive oil is a healthy fat; but I don't think we need that much. So here's my revised recipe.


Ingredients:

  • 1 lb. grape tomatoes, halved

  • 2-3 cloves of garlic, or more if you'd like

  • 2 1/2 - 3 tbls. olive oil

  • 1 15-ounce can Cannellini beans (or other white beans); drained

  • 1/4 cup sliced fresh basil (more to garnish)

  • Salt and pepper to taste

Directions:

  • Preheat oven to 400 degrees.

  • Pour olive oil into a 13x9 inch baking pan.

  • Place halved grape tomatoes and garlic cloves in the baking pan.

  • Cook for 20 minutes.

  • Remove from oven and mash tomatoes and garlic.

  • Blend white beans and basil into the tomato/garlic mixture. Sprinkle with salt and pepper.

  • Cook for another 5 minutes. Remove from heat and sprinkle with a few more basil leaves. Serve warm to hot.
