Sweet potatoes are an excellent source of beta-carotene, which can be converted to
vitamin A in the body, and help support the immune system and gut health. They are also a great source of fiber, vitamins and minerals. Sweet potatoes are rich in antioxidants that protect your body from free radical damage and chronic disease. Sweet potatoes are also naturally packed with vitamin B5, riboflavin, niacin, thiamin, and carotenoids due to their naturally orange color. Scientists have determined that sweet potatoes contain anti-inflammatory, anti-diabetic, and anticancer properties.
Roasting sweet potatoes in coconut oil, makes the outside skin a little crispy while the inside becomes soft. Follow these directions:
Preheat oven to 400 degrees.
Melt 2 tbls. of coconut oil in small saucepan.
Cut 2 lbs. sweet potatoes into 1" chunks and place in bowl.
Pour melted coconut oil over the sweet potatoes and blend.
In a separate small bowl, mix 1 1/2 tbls. maple syrup, 1 tbl. grated orange zest and 1 tsp. ground cinnamon.
Pour maple syrup mixture over the sweet potatoes and blend everything together.
Spread sweet potatoes onto a large baking sheet.
Roast until tender, about 30-40 minutes, stirring about 1/2 way through.
Sprinkle shredded unsweetened coconut over the sweet potatoes 10-12 minutes before they're cooked.
Allow potatoes to cool a bit and then serve.
