Avocado, Tomato & Cucumber Salad

This simple and quick dish is great on top of salad greens, as a side dish for a main meal, or as a light lunch served with bread or crackers.


  • 1 avocado, seeded and diced

  • 1 cucumber, peeled and diced

  • 1 cup grape tomatoes, cut in halves

  • 1/4 red onion, diced

  • Juice of 1/2 lemon

  • 1 tbl. extra virgin olive oil

  • Salt and pepper to taste

  • 1/4 cup of fresh herbs of your choice, such as cilantro, basil, oregano, or thyme


  • Place cucumber, tomatoes, avocado, onion and herbs in a bowl.

  • Toss with lemon juice, olive oil, salt and pepper.
