This simple and quick dish is great on top of salad greens, as a side dish for a main meal, or as a light lunch served with bread or crackers.
Ingredients:
1 avocado, seeded and diced
1 cucumber, peeled and diced
1 cup grape tomatoes, cut in halves
1/4 red onion, diced
Juice of 1/2 lemon
1 tbl. extra virgin olive oil
Salt and pepper to taste
1/4 cup of fresh herbs of your choice, such as cilantro, basil, oregano, or thyme
Directions:
Place cucumber, tomatoes, avocado, onion and herbs in a bowl.
Toss with lemon juice, olive oil, salt and pepper.
