Apple Butter is a concentrated version of applesauce. This is done by slow-cooking the apples so that the sugar in the apples is caramelized. Yum!
Ingredients
4 pounds of organic sweet apples such as Honeycrisp, Fuji, or Ambrosia, cored and diced
2 cups apple cider
1/2 cup real maple syrup
1 teaspoon vanilla extract
1 teaspoon cinnamon or 1 cinnamon stick
1/2 teaspoon freshly grated nutmeg
1/8 ground cloves
1 pinch salt
Optional: 1 vanilla bean; sliced and seeds scraped out
Instructions
In your slow cooker, combine all ingredients. Cover and cook on low for 8-10 hours or on high for 4-5 hours, stirring halfway through cooking.
Remove the cinnamon stick and transfer the apples to a blender, or use an immersion stick, and puree until smooth.
Cook, uncovered, on high for 1-2 hours or until slightly thickened. Taste and adjust sweetness, if necessary.
Cool and store in glass jars in the fridge for up to 1 month or can them for a longer shelf-life.
Apple Butter is great mixed into your oatmeal, or spread on top of toast or a piece of plain cake.
